Peanut Butter Cookies Made with Cupcake Mix
- 1 Box Duncan Hines Moist Deluxe Classic Yellow Cupcake Mix- makes 12 cupcakes
- 2 tablespoons crunchy peanut butter (2 Cdas. mezcla magdalena amarilla mantequilla de cacahuate crujiente)
- 3 tablespoons vegetable oil (3 Cdas. Soperas de Aceite Vegetal)
- 2 large eggs (2 Huevos grandes)
- Preheat oven to 350 degrees. Spray oil on baking sheet.
- Mix together eggs, oil, peanut butter and cupcake mix until well blended.
- Scoop by spoons full onto baking sheet.
- Bake 12-15 minutes. Remove cookies from oven and cool before lifting from baking sheet.*
Makes approximately 12 cookies.
However, the number of cookies made depends on the size of the spoon you use to
scoop out the dough. This dough is not as stiff as regular peanut
butter cookie dough and the cookies taste lighter, although they are not
lighter in calories or fat.
* I use aluminum foil on a pizza stone instead of a baking sheet. Then
all I have to do is lift off the foil and set it aside for the cookies to cool
while I make the next batch.

I’m a wife and mom of three. I teach piano lessons, and love self-help books. I carpool and I sacrifice for my kids karate lessons.
I love baking, and even more than that, I love blogging. I don’t have any kind of formal baking training, and that’s the point of this blog. It’s not meant to be fancy or complicated. The recipes are meant to bring better and more varied cookies to everyday life. My one hard and fast rule: no ingredients from specialty stores. If I can’t buy it at my local grocery store, I’m not using it.

S’mores Cookies
This is not my first time baking with graham crackers. In fact, adding some graham cracker crumbs to the chocolate chip cookies is just SO fantastic. It gives a little unexpected oomph to the cookies. I figured some marshmallow frosting would put these right over the top.
Raspberry Sorbet
Sorbet is crazy simple to make (this one has only 5 ingredients!), and it’s easy to make it really delicious. I added a mint leaf to my dish, and I loved what the mint did for the flavor.

Baked Pork Chops
My daughter and son-in-law came up with a new recipe for baked pork chops. After tasting them last night I just had to share! My daughter keeps Hidden Valley Ranch Dressing mix on hand and uses it in a lot of her dishes. This one certainly is a winner!
Heather's Baked Pork Chops
Directions
- Preheat oven to 425 degrees F.
- Rinse pork chops- they use boneless, but it doesn't matter which you use.
- Sprinkle dry Ranch Dressing seasoning on top and bottom of each pork chop. No other seasoning or meat tenderizer is needed.
- Spray oil in baking dish. Place pork chops in baking dish.
- Bake pork chops 30 minutes in the preheated oven, turning once. Cover if pork chops seem to be drying out.
