IMPOSSIBLE CUSTARD PIE and Impossible Coconut Custard Pie

IMPOSSIBLE CUSTARD PIE 
2 c. milk
1/2 c. flour
1/2 c. sugar
4 eggs
1 tsp. vanilla
1 tsp. lemon juice
1/2 tsp. salt


Mix together in blender or with mixer. Pour in a greased pie pan and bake at 350 degrees until set in middle about 45 minutes. Forms own crust.
IMPOSSIBLE COCONUT CUSTARD PIE

1 c. sugar
2 c. milk
4 eggs
1 c. coconut
1/2 c. flour
1 tbsp. vanilla
1 stick butter
1/4 tsp. salt
1/2 tsp. baking powder


Blend everything together in a blender until smooth. Pour into greased 10 inch glass pie plate. Bake at 350 degrees for 45 minutes. Cool. Serve plain or with whipped cream. Store in refrigerator. This is a large pie be sure to use a 10 inch pie plate. It could easily be cut in half for smaller families. Makes its own crust.
